White Caribbean Cocktail Recipe

We've been getting a lot of requests for this cocktail recipe - so here it is! With a silky smooth texture and beautiful passionfruit garnish, it's perfect for impressing a loved one!

It's a bit more tricky than some of our other cocktails, with some slightly less common ingredients, but once you've got them in, you'll be able to make White Caribbeans any time you like!

For the best presentation, this drink is best served in a coupe or a classic martini glass. The wide rims on these glasses will really showcase the garnish!


  • Coconut flavoured rum
  • White Cacao liqueur
  • Vanilla syrup (or you could sub this for regular sugar syrup + vanilla essence)
  • Passionfruit puree
  • Coconut Milk
  • A whole passionfruit

For this recipe, we recommend using a cocktail shaker.


Makes 2 White Caribbeans

  1. Put a handful of ice in the shaker
  2. Pour 60ml Coconut Flavoured Rum
  3. Add 40ml White Cacao Liqueur
  4. Next is 30ml Vanilla Syrup (or 25ml sugar syrup + 5ml Vanilla Essence)
  5. 30 ml of passionfruit puree
  6. Pour in 80ml of coconut milk (make sure you've given it a really good stir in the tin before you pour it in)
  7. Now fix in the other part of the shaker and.... SHAKE IT!! Shake it real good.....
  8. Use the strainer on the cocktail shaker to pout the liquid (no ice) into the glasses
  9. Cut your passionfruit in half lengthways and gently place half in each glass.


Top Tip: If you don't have a cocktail shaker, you can also put the ingredients minus the ice in a blender for a quick wizz (don't overdo it - a couple of seconds is good!). Add a handful of ice and give it a really good stir with a spoon so the liquid cools. When pouring into the glasses, use the back of the spoon to keep the ice in the jug!
