Vegan Chilli Chocolate Brownie Recipe
Spice up dessert with a pinch of chilli! It might sound crazy, but the hint of spice really compliments the rich chocolate. This is one of our most popular vegan desserts - it's very rich and perfect for an indulgent date night dinner dessert.
If you're not convinced, you can skip the chilli all together - it'll still taste delicious. You can also add 100g of any nuts of your choice if you want to mix it up a bit!
You Will Need
- 140g plain flour
- 20g cocoa powder
- 200g caster sugar
- 80ml vegetable or sunflower oil
- 200 grams vegan dark chocolate + 50g more for a drizzle finish (most dark chocolate is vegan - it won't always say "vegan" on the label, but check the ingredients for milk/dairy products)
- 240 ml your choice of alt-milk. We think almond milk works well!
- 100g chocolate chips
- 1 tsp chilli powder
- 1 pinch chilli flakes
Method
- First things first - pour yourself a rum! Baking is thirsty work....
- Now we're ready! Preheat your oven to 180 degrees C.
- Line an 8-inch square (or similar) baking tin with baking parchment - a little bit of oil on the bottom will help it stick down to the tin.
- Melt your chocolate in the microwave, giving it 10 seconds at a time and mixing in between. It's really easy to burn it, and it'll carry on melting after you take it out so it's best not to overdo it!
- In a large bowl mix the flour, chilli powder, cocoa powder and sugar gently.
- Pour in the oil, melted chocolate and almond milk. Mix with a wooden spoon until smooth and combined.
- Add in 2/3 of the chocolate chips and mix gently.
- Pour your batter into the tin. Sprinkle the rest of the chocolate chips over, as well as the chilli flakes.
- Bake for 25 minutes - they might seem a bit squidgy when they come out but they'll firm up as they cool!
- For, well, the icing on the cake, you can melt another 50g of dark chocolate and drizzle over the top - it's not necessary but it will make your brownies look great!
- We suggest waiting a good couple of hours for them to cool down before slicing up and tucking in!
Serve with your choice of ice cream, or just on its own.
