Jerk Christmas Ham Recipe

It's the season to spice up your Christmas dinner with a Caribbean twist! 

Chef Collin's jerk marinade recipe is the PERFECT way to level up this year's holiday feast with a burst of flavour. It's sticky, sweet, spicy and just SO delicious! It's also super easy to make, and the ultimate way to impress your friends. 

So if you've been left in charge of hosting dinner this year and don't know where to start, don't worry - we've got your back 😉

You will need: 

  • 200g jerk marinade. Check out Chef Collin's marinade recipe here
  • 2kg ham
  • 2 chopped onions
  • 1 sprig of spring onion
  • 20g fresh thyme
  • 1 scotch bonnet
  • 60g spice mix
  • 100g honey
  • 1 lime
  • 1L water

Method: 

  1. First, get the tunes on! Cooking is always better with some beats. Head to our Spotify for some playlists to bring your kitchen to life.
  2. Put the ham, 100g of jerk marinade, the chopped onions, spring onion, fresh thyme, scotch bonnet, spice mix and water in a pot and boil for 1 hour and 30 minutes. Once this time is up, remove the pot from the hob and leave to rest for another 30 minutes. 
  3. Mix the remaining 100g of jerk marinade with the 100g of honey and the juice of one lime to make a glaze. 
  4. Take the ham out of the pot, remove the skin and glaze with the mixture. 
  5. Roast in the oven for 30 minutes at 200°C. 
  6. Cut into slices and serve with some rice & peas and a bit of callaloo for the perfect Caribbean-inspired Christmas dinner!
