Meet our new Trini Cod

If you're a fan of seafood or fish dishes, or just looking for something that feels a little lighter - then read on!

The Inspiration

Surrounded by miles and miles of clear, turquoise waters, it's no surprise that fish dishes are a staple in Caribbean cuisine across the islands. From Fish Tacos, to Fish Curries and fried fish dishes, there's no end to the choice on offer.

For our Trini Cod, we took inspiration from fish curries sampled across the islands, especially Grenada and Trinidad. These curries are often mildly spiced, allowing the delicate flavours of the fish to really come through.

The Flavours

Delicately steamed cod is served on top of creamy mashed potatoes, accompanied by seasonal roasted greens, all drizzled with a light and mildly spiced garlic butter sauce.

The steamed cod is tender and flaky, with a mild taste that pairs beautifully with the richness of the creamy mash. The seasonal roasted greens add a fresh, vibrant crunch, while the light garlic butter sauce and charred cherry tomatoes bring a subtle sweetness and a silky finish to the dish.

This is the perfect meal for anyone who loves a fish dish or fancies something a little lighter that's still packed with flavour and will leave you feeling full and satisfied.  It's great for date night - and can be easily shared, but be warned - you might not want to after one mouthful of this deliciously addictive dish!

It's a great treat for a cold autumn day, when you fancy something that'll warm you up but also help you float away to an island beach-side paradise for a while.

Pair Trini Cod with...

The best companion to the Trini Cod might just be a glass of cold and crisp Sauvingnon Blanc!  If you're more of a cocktail lover, or fancy something with a little more sweetness, we would recommend one of our Sundowner cocktails - the French Martini is our tropical take on this classic and is the perfect, light drink to pair with Trini Cod - full of flavour without being too overpowering.  which has a subtle citrus-infused sweetness but remains light and refreshing.

If you're looking for a side to pair with the Trini Cod, we would recommend a side of Plantain as the sweetness will balance perfectly with the smooth, buttery sauce. A side of dumplings (festivals) is also ideal for mopping up the last of the sauce - you're not going to want to waste a bite!
